Intro
This recipe is one of my favourite low carb meals to make whilst going though a weight cut. It’s also paleo, extremely healthy and is generally more suited to a fat loss nutrition goal. The best part is this is super easy to make is high in protein, is extremely filling not to mention very tasty. Enjoy
Recipe: Mexican Chicken Mince Stir Fry – Ingredients (serves 6)
- 1 tablespoon olive oil
- 1Kg Chicken Mince.
- 1 brown onion, finely chopped
- 1 red capsicum, chopped into slices
- 1 green capsicum, chopped into slices
- 1 yellow capsicum, chopped into slices
- 2 carrots medium, grated
- ¼ Fresh Lime
- 3 cloves of fresh garlic, crushed
- 1 bunch of fresh coriander, chopped finely
- 1 ½ Tbsp Smoked Praprika
- 2 Tbsp Cumin
- 1 Tbsp Sesame Seeds
- 1 Tsp Chilli Powder
- 1 Tsp Onion Powder
- Salt to taste (approx. 2 tsp)
Method
- Heat the oil in a large wok over medium-high heat. Add onion. Cook, stirring, for 3 to 4 minutes or until softened. Add garlic. Stir to combine. Be careful not to burn the garlic.
- Add chicken mince to the wok and break it apart as it cooks to ensure there are no large chunks. Once its mostly cooked add in the Smoked Paprika, Cumin, Chilli, Onion Powder, Salt and stir in well.
- Now its time to add in the Capsicums, Carrots, Coriander, Sesame Seeds and squeeze in the juice of ¼ a lime. Stir in well and let sit on a low heat for about 5-10mins until its all cooked.
